  • 2 jars (12-14 oz each) marinated artichoke hearts
  • 34 ounces arugula
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (thinly sliced)
  • ½ cup black olives
  • ¼ cup shaved parmesan cheese
  • ¼ cup extra virgin olive oil
  • 2 tablespoons vinegar (any)
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup (or honey)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Arrange the arugula on a large serving platter. Drain and scatter the artichokes over the greens.
  2. Top with halved cherry tomatoes, black olives, and sliced red onion.
  3. In a small jar, combine dressing ingredients. Shake well until mixed.
  4. Drizzle half of the dressing over the salad and serve with remaining dressing on the side. Finish with shaved parmesan.
