  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (softened)
  • 2/3 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk (room temperature)
  • 2 large apples (peeled and chopped)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan with cooking spray.
  2. In a small bowl, mix together brown sugar and cinnamon. Set aside.
  3. In a large bowl, cream butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In another bowl, whisk flour and baking powder together; gradually add to the wet mixture alternating with milk until just combined.
  5. Gently fold in the chopped apples.
  6. Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon sugar mixture on top. Pour in remaining batter and top with the rest of the cinnamon mixture.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling for 10 minutes before transferring to a wire rack to cool completely.
