  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • Additional salt to taste
  • Optional: 2 tbsp fresh parsley, finely chopped for garnish

Instructions

  1. Preheat oven to 225F and line two baking sheets with parchment paper.
  2. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer.
  3. Layer the slices in a colander, sprinkling with salt as you go. Let drain for one hour.
  4. Pat zucchini slices dry with tea towels and arrange on baking sheets without touching.
  5. Lightly spray with avocado oil or brush with liquid oil and season with paprika, pepper, and remaining salt.
  6. Bake for 70 to 90 minutes until crisp, rotating sheets halfway through cooking.
  7. Enjoy immediately or store in an airtight container for up to three days.
