  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic glaze
  • Fresh parsley for garnish

Instructions

  1. Whisk together olive oil, minced garlic, Dijon mustard, salt, and pepper in a small bowl.
  2. Place flank steak in a resealable bag and pour marinade over it. Seal tightly and refrigerate for 1 to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove steak from marinade and discard the marinade. Grill for about 5 to 7 minutes per side or until the internal temperature reaches 135°F for medium-rare.
  5. Let the steak rest for 5 minutes before slicing against the grain.
  6. In a bowl, combine halved cherry tomatoes, mozzarella balls, and chopped basil.
  7. Serve sliced steak topped with Caprese mix and drizzled with balsamic glaze. Garnish with parsley if desired.
