  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh chives, thyme, and sage

Instructions

  1. Slice the onions thinly and caramelize them in olive oil over medium heat for 40–50 minutes until golden brown.
  2. While the onions cook, wash and chop the potatoes into even pieces, then boil them in salted water for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them with butter, kosher salt, and half & half (or coconut milk) until smooth.
  4. Mix half of the caramelized onions and Parmesan cheese into the mashed potatoes.
  5. Serve warm, topped with remaining onions, chives, thyme, sage, and melted butter.
