Ingredients

Scale
  • 2 boxes refrigerated pie crust (14.1 oz each)
  • 1 can blueberry pie filling (21 oz)
  • 1 lemon (zested)
  • 1 egg (separated for glaze)
  • 2 1/2 cups powdered sugar
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 425°F.
  2. In a shallow bowl, combine blueberry pie filling with lemon zest; set aside.
  3. Roll out the pie crust and cut into 4-inch circles using a biscuit cutter.
  4. Place 1 tablespoon of filling in the center of each circle and brush edges with egg yolk.
  5. Fold and seal the edges tightly with a fork; poke holes on top to allow steam to escape.
  6. Brush tops with beaten egg white and bake on a parchment-lined baking sheet for about 15 minutes or until golden brown.
  7. For glazing, whisk powdered sugar with lemon juice until smooth; coat baked hand pies in glaze.
