  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream
  • 2 cups heavy cream (for ganache)
  • Chopped pistachios, for garnishing

Instructions

  1. Preheat the oven to 350ยฐF. Grease an 8ร—8 inch baking pan and line it with parchment paper.
  2. Brown the salted butter in a saucepan over medium heat for about 5 minutes until golden, then let it cool slightly.
  3. In one bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, combine sugars with cooled brown butter, then add the egg, heavy cream, and vanilla extract.
  4. Gently fold in dry ingredients until just combined, then mix in chocolate chips.
  5. Spread the mixture into the prepared pan and bake for 22-27 minutes until lightly golden.
  6. Toast kataifi in melted butter until crispy; mix with pistachio cream.
  7. Prepare ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  8. Layer pistachio filling on baked cookie base and pour ganache on top. Chill for at least an hour before slicing.
