  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: Extra basil leaves and balsamic glaze for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat; cook chicken until golden brown on both sides (5–7 minutes per side). Let rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, basil, balsamic vinegar, olive oil, and salt for the bruschetta topping.
  5. In the same skillet used for the chicken, toss drained pasta with any drippings. Add sliced chicken on top and spoon bruschetta topping over everything.
  6. Sprinkle with Parmesan cheese and garnish with additional basil if desired. Serve warm.
