  • 10 ounces spaghetti
  • 2½ cups diced Roma tomatoes (about 4 tomatoes)
  • ½ cup finely chopped red onion
  • 4 garlic cloves, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • ¼ cup thinly sliced basil (chiffonade)
  • 6 ounces mozzarella balls

Instructions

  1. Cook the spaghetti in a large pot according to package directions until al dente. Drain and set aside.
  2. In a large bowl, mix diced tomatoes, red onion, half of the minced garlic, salt, pepper, 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, and half of the basil.
  3. In a skillet over medium-high heat, add remaining olive oil. Sauté the rest of the garlic and oregano until fragrant. Add hot pasta water and stir in butter until melted.
  4. Combine drained spaghetti with garlic sauce. Add lemon juice, mozzarella balls, and bruschetta mixture. Toss gently to blend all flavors.
