  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp crushed fresh coriander seeds

Instructions

  1. Heat vegetable oil and butter in a large skillet over medium heat. Add chicken pieces and cook until browned (5–7 minutes). Remove and set aside.
  2. In the same skillet, sauté chopped onion until translucent (3–4 minutes). Add minced garlic and grated ginger; cook for an additional minute.
  3. Incorporate ground coriander, garam masala, turmeric, and chili powder into the onions; stir for about 2 minutes.
  4. Return chicken to the skillet, pour in enough broth to create a sauce, cover, and simmer for about 15 minutes until cooked through.
  5. Just before serving, stir in crushed coriander seeds for added texture.
