Ingredients

  • 12 eggs
  • 1 stalk of celery
  • 1 green onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs in a pot of water for about 11 minutes. Once done, transfer them to an ice bath to cool.
  2. Peel the cooled eggs and slice them in half lengthwise. Remove yolks and place them in a mixing bowl.
  3. Mix the yolks with mayonnaise, Creole mustard, chopped celery, chopped green onion, Cajun seasoning, and hot sauce until smooth.
  4. Spoon or pipe the filling back into each egg white half and garnish with additional green onion if desired.
