  • 1 1/4 pounds boneless skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 5 ounces baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1 cup mini fresh mozzarella balls
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons pesto
  • Kosher salt and black pepper to taste

Instructions

  1. Whisk together balsamic vinegar, pesto, olive oil, honey, salt, and pepper in a small bowl for the marinade.
  2. Season chicken with salt and pepper, place in a freezer bag, pour marinade over it, seal, and refrigerate for at least one hour or overnight.
  3. Preheat grill to medium-high heat and cook chicken for about 4–6 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
  4. In another bowl, mix Greek yogurt, low-fat milk, pesto, parmesan cheese, garlic powder, salt, and pepper for the dressing.
  5. On a serving platter or bowl, layer spinach, tomatoes, mozzarella balls, and sliced chicken. Drizzle with dressing before serving.
