  • 1 lb boneless, skinless chicken breasts
  • 10 oz bowtie pasta
  • 2 cups heavy cream
  • 1 cup shredded Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 garlic cloves, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tbsp Cajun seasoning
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the bowtie pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  2. Season chicken chunks with Cajun seasoning, onion powder, salt, and pepper. In a skillet, heat olive oil and half the butter over medium-high heat; then sear the chicken until golden brown and cooked through. Remove from skillet.
  3. Lower the heat and add remaining butter and minced garlic to the same skillet; cook until fragrant.
  4. Pour in heavy cream, stirring well before adding the cheeses gradually until melted and smooth. Adjust thickness with reserved pasta water if needed.
  5. Toss cooked pasta into the sauce and add back the chicken. Simmer briefly before serving hot.
