  • 1 cup plain yogurt
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 2 teaspoons paprika
  • ½ teaspoon black pepper
  • 1½ teaspoons salt
  • 4 Flatbreads (for wraps or doner bread pita for sandwiches)
  • 4 leaves lettuce (finely chopped)
  • 3 tablespoons red cabbage (finely sliced)
  • 1 onion (sliced)
  • 1 tomatoes (sliced)
  • 1 cucumber (chopped)
  • ½ cup rice
  • ½ cup potato Chips
  • ½ cup salad (red cabbage, onions, tomatoes, cucumber)
  • 2 pickles (sliced or chopped)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl, combine yogurt, olive oil, lemon juice, tomato paste, garlic powder, cumin, paprika, black pepper, and salt. Add chicken thighs and coat well. Cover and refrigerate for at least 3 hours or overnight for best flavor.
  2. Preheat oven to 400°F (200°C). Soak bamboo skewers if using. Line an oven-safe pan with foil. Thread marinated chicken onto skewers and place them on the pan's rim. Bake for 30 minutes until golden brown; flip kebabs and bake for an additional 25 minutes.
  3. Let kebabs rest before slicing thinly with a sharp knife. Serve in wraps with salad ingredients or on a plate with rice and chips.
