  • 1 lb boneless skinless chicken breast (or thighs)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 ¼ lbs Yukon Gold potatoes (cubed)
  • 1 cup half and half
  • 1 ½ cups cheddar cheese (shredded)
  • Salt/Pepper
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup flour
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. In a large soup pot over low heat, cook turkey bacon until crispy. Remove from pot and reserve drippings.
  2. Sear seasoned chicken in the same pot over medium-high heat until golden brown; set aside.
  3. Sauté onion, carrots, and celery in reserved drippings until softened.
  4. Stir in garlic, hot sauce, Worcestershire sauce, and seasonings; cook for another minute.
  5. Sprinkle flour into the mixture; gradually add chicken broth while stirring continuously.
  6. Add cubed potatoes and seared chicken; bring to a boil then simmer until potatoes are tender.
  7. Stir in half and half and cheddar cheese until melted and creamy. Garnish with green onions before serving.
