  • ½ cup fresh cilantro
  • 1 scallion
  • 2 cloves garlic
  • ¼ cup plain plant-based yogurt or olive oil
  • Zest and juice of 2 limes
  • 1 tbsp maple syrup
  • 1 can (15 oz) white beans
  • ⅓ cup red onion
  • ½ cucumber
