  • 1 tablespoon olive oil
  • ¾ cup sparkling water
  • 1 ½ cups scallions (finely chopped)
  • Vegetable oil
  • 1 cup crema Salvadorean/Mexicana or sub sour cream or Greek yogurt
  • 2 tablespoons fresh scallions (minced)
  • 1 ½2 tablespoons sriracha hot sauce
  • 2 teaspoons freshly squeezed lime juice
  • ½ teaspoon lime zest
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl, mix dry ingredients: flour, baking powder, sugar, salt, and pepper.
  2. In a separate bowl, whisk together wet ingredients: egg, oil, and sparkling water.
  3. Combine wet ingredients with dry ingredients until smooth.
  4. Fold in corn and scallions gently into the batter.
  5. Line a rimmed baking sheet with paper towels for draining.
  6. Add ½ inch of vegetable oil to a frying pan over medium-high heat.
  7. Heat oil until it reaches approximately 365 degrees F.
  8. Drop 2-tablespoon portions of batter into hot oil; flatten slightly with a spoon.
  9. Avoid overcrowding the pan to ensure even cooking.
  10. Cook each fritter for about 2–3 minutes per side until they turn golden brown.
  11. Remove fritters from oil and place them on the lined baking sheet.
  12. In a food processor, combine crema, minced scallions, sriracha hot sauce, lime juice, lime zest, kosher salt, and black pepper.
  13. Blend until smooth for a flavorful dipping sauce.
