  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • Olive oil for frying and sautéing
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herb blend, salt, and pepper. Shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; set aside.
  3. In the same skillet, sauté onion and bell peppers until softened. Stir in garlic, smoked paprika, chicken stock, heavy cream, and tomato paste.
  4. Return meatballs to the skillet and simmer covered for 10-12 minutes until fully cooked through.
