  • 12 oz rotini or fusilli pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear for 8-10 minutes until golden brown; remove from skillet.
  3. In the same skillet, reduce heat and melt butter. Add garlic; cook for 1 minute. Stir in heavy cream and milk; simmer gently.
  4. Add Velveeta cheese; stir until melted and smooth. Incorporate cheddar, mozzarella, and Parmesan cheeses until the sauce thickens.
  5. Mix in cooked pasta to coat thoroughly with the sauce. Serve topped with seared chicken.
