  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese for serving
  • Crushed red pepper flakes for spice

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper.
  2. Place seasoned chicken in the slow cooker along with sliced vegetables and chicken broth. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Shred the cooked chicken and return it to the slow cooker.
  4. Stir in cream cheese and Parmesan until melted and creamy (cook for an additional 10–15 minutes).
  5. Cook pasta separately until al dente; drain well.
  6. Combine pasta with the sauce in the slow cooker and mix thoroughly.
  7. Serve hot with parsley garnish and extra Parmesan if desired.
