  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk or sour cream
  • 2 cups mashed ripe bananas (about 4 medium bananas)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1/2 to 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F and lightly grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together melted butter, sugar, egg, vanilla extract, buttermilk (or sour cream), and mashed bananas until well combined.
  3. In another bowl, mix in the dry ingredients: flour, baking powder, baking soda, and salt until no dry streaks remain.
  4. Divide the batter; stir cocoa powder into half of it to create the chocolate layer.
  5. Spread the chocolate batter evenly in the greased pan followed by dolloping the banana batter on top.
  6. Sprinkle chocolate chips over the top before baking.
  7. Bake for 30–35 minutes until puffed; a toothpick inserted should come out with moist crumbs.
