  • 2 tablespoons unsalted butter
  • 3 large yellow onions
  • 4 garlic cloves
  • 1 tablespoon Worcestershire sauce
  • 5 1/2 cups water (or beef broth)
  • 1 pound short cut pasta
  • 5 oz. Gruyere cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. In a large pot over medium heat, combine olive oil and butter. Add sliced onions with salt and pepper; cook until golden brown (30-40 minutes).
  2. Stir in minced garlic and red pepper flakes; cook for an additional minute.
  3. Add Worcestershire sauce and soy sauce; mix well.
  4. Pour in water (or broth) along with evaporated milk and cornstarch; stir to combine.
  5. Mix in beef bouillon, parsley, thyme, oregano, paprika, and pepper.
  6. Bring to boil, then add uncooked pasta; reduce heat and simmer for 10-12 minutes until al dente.
  7. Remove from heat; stir in Gruyere and Parmesan cheeses until melted.
