  • ¾ cup pumpkin puree
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 can (8 count) refrigerated biscuits
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a loaf pan with nonstick spray.
  2. In a bowl, mix pumpkin puree, ¼ cup sugar, vanilla extract, pumpkin pie spice, and egg until smooth.
  3. Slice each biscuit in half horizontally. Mix remaining sugar and cinnamon in a small bowl; coat each biscuit slice.
  4. Stack biscuit slices with pumpkin mixture in between layers and place in the loaf pan.
  5. Bake for 30-40 minutes until golden brown; cover with foil if browning too quickly.
  6. While cooling, whisk together powdered sugar, cinnamon, and heavy cream/milk for glaze.
  7. Drizzle glaze over cooled loaf before serving.
