  • 4 cups corn kernels (fresh or frozen)
  • ½ cup cotija cheese, crumbled
  • ½ red onion, diced
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, chopped
  • Greek yogurt and mayonnaise for dressing
  • Lime juice and zest
