  • 1 egg
  • 1 cup panko breadcrumbs

  • 1 cup cooked corn
  • 1/4 cup feta cheese
  • 1/2 jalapeño (sliced)
  • 3 tbsp red onion (diced)
  • 2 tbsp cilantro
  • Pinch salt and pepper

Instructions

  1. Prepare a coating station with flour mixed with smoked paprika, salt, and pepper on one plate, whisked egg in another bowl, and panko breadcrumbs on a third plate.
  2. Slice the tomatoes into thick rounds and coat each slice in flour, then egg, and finally panko breadcrumbs.
