  • 1012 medium shrimp, peeled & deveined
  • 3 medium potatoes, peeled & cubed
  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 tbsp butter
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • ½ cup milk (more if needed)
  • 1 tsp olive oil for sautéing vegetables
  • Pinch of salt & pepper for vegetables

Instructions

  1. Boil peeled and cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet, heat olive oil over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for about 4-5 minutes until tender.
  3. In another skillet, melt butter with olive oil over medium heat. Sauté minced garlic for about 30 seconds. Add shrimp along with paprika, salt, and pepper; cook for 2-3 minutes per side until pink.
  4. Serve mashed potatoes alongside shrimp and vegetables.
