  • 2 large hard-boiled eggs, finely diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook the macaroni in salted water until al dente. Drain and rinse under cold water; toss with olive oil to prevent sticking.
  2. In a large mixing bowl, combine the cooked macaroni with sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
  3. In a separate bowl, whisk together mayonnaise, sour cream, sweet pickle juice, red apple vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Pour the dressing over the macaroni mixture and toss gently to coat.
  5. Cover and refrigerate for at least 1 hour before serving.
