  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • ½ cup feta cheese (crumbled)
  • Fresh basil (for garnish)

Instructions

  1. 1. Cook pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. 2. In a skillet over medium heat, add olive oil. Sauté garlic and red onion until softened.
  3. 3. Add cherry tomatoes and Kalamata olives, cooking until tomatoes soften slightly. Stir in lemon juice, salt, pepper, oregano, and basil.
  4. 4. Toss drained pasta into the skillet with the tomato mixture. If needed, add reserved pasta water for desired consistency.
