  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Season the chicken with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
  2. Grill the chicken over medium-high heat for 5-6 minutes per side until cooked through.
  3. Toss halved Brussels sprouts with olive oil, salt, and pepper; roast at 200C (390F) for about 20 minutes until crispy.
  4. In a saucepan, melt butter and whisk in flour. Gradually add milk and simmer until thickened; stir in minced garlic and Parmesan until smooth.
  5. Slice the grilled chicken and serve in a bowl with roasted Brussels sprouts; drizzle with the creamy sauce.
