  • 2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/2 cup brown sugar
  • 2 tablespoons sweet rice apple vinegar
  • 2 cups pineapple chunks
  • Bell pepper and onion chunks (to taste)
  • Olive oil (for grilling)

Instructions

  1. Prepare the marinade by combining soy sauce, water, rice apple vinegar, brown sugar, minced garlic, and ginger in a saucepan over medium heat. Bring to a boil and simmer for 5 minutes.
  2. Whisk cornstarch with water until smooth; add to the sauce mixture to thicken. Remove from heat and let cool.
  3. Marinate chicken pieces in half of the sauce for at least 1 hour.
  4. Preheat grill to medium heat. Assemble kabobs by alternating marinated chicken with pineapple and vegetables on soaked skewers.
  5. Grill kabobs for about 3-4 minutes on each side until the internal temperature reaches 170°F (75°C). Brush with reserved sauce during grilling.
