  • 2 large Egg Whites (Room Temperature)
  • 1/4 tsp Cream of Tartar
  • 1/2 cup White Sugar
  • 1 stick Unsalted Butter (softened)
  • 2 cups Confectioner's Sugar
  • 2 tbsp Milk
  • Purple Gel Food Coloring
  • Black Decorating Frosting

Instructions

  1. Preheat the oven to 200°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat room temperature egg whites with an electric mixer on low speed, adding cream of tartar. Gradually add sugar while increasing to high speed until stiff peaks form.
  3. Pipe meringue into ghost shapes on the lined baking sheet.
  4. Bake for 2 hours and then let cool in the oven for another 30 minutes.
  5. While cooling, prepare buttercream by beating softened unsalted butter, confectioner's sugar, and milk until smooth. Add purple gel food coloring and mix well.
  6. Frost each cupcake generously with buttercream.
  7. Decorate meringues with black decorating frosting for eyes and mouths, then place one ghost on each frosted cupcake.
