  • 4 cups cauliflower rice
  • 8 oz cream cheese (or Greek yogurt)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for sautéing cauliflower rice)
  • 1 cup chopped spinach or broccoli

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté cauliflower rice in olive oil until tender (5-7 minutes), seasoning with salt and pepper.
  3. In a mixing bowl, combine sautéed cauliflower rice, shredded chicken, cream cheese, half the cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper.
