  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, and egg; whisk until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add dry mixture to wet mixture; stir gently until just combined.
  5. Scoop batter into a greased muffin tin, filling each cup about two-thirds full.
  6. Bake for approximately 18 minutes or until a toothpick comes out clean.
  7. Allow to cool in the tin for a few minutes before transferring to a wire rack.
