  • 1 cup graham cracker crumbs
  • 3 tablespoons unsalted butter (or coconut oil), melted
  • 1 (8 oz.) package plain cream cheese (1/3 reduced fat), softened
  • 1/4 cup plain nonfat Greek yogurt
  • 1 1/2 tablespoons honey
  • 1/2 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chopped fresh fruit and/or mini chocolate chips or chocolate sauce

Instructions

  1. Spray a mini muffin tin with cooking spray and set aside.
  2. In a bowl, mix graham cracker crumbs and melted butter until fully combined.
  3. Press 2-3 tablespoons of the crust mixture into each muffin cup to form the base.
  4. In another bowl, beat cream cheese, Greek yogurt, honey, lemon juice, vanilla extract, and salt until smooth.
  5. Spoon about a tablespoon of filling over each crust and smooth the tops.
  6. Add your choice of toppings on top of each cheesecake bite.
  7. Chill in the freezer for 15-20 minutes or refrigerate for at least an hour before serving.
