  • 1 cup heavy cream

  • ½ cup pure honey
  • ⅓ cup light brown sugar
  • ⅓ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Prepare your pie crust according to your recipe and chill.
  2. Preheat the oven to 350°F.
  3. Roll out and bake the crust until golden (20 minutes with weights, then an additional 8 minutes).
  4. Heat milk and cream in a saucepan until steaming.
  5. In a bowl, whisk together eggs, honey, sugars, cornstarch, vanilla extract, and salt.
  6. Slowly combine warm milk into the egg mixture while whisking.
  7. Return to the saucepan over medium-low heat, stirring until thickened (about 8 minutes).
  8. Pour custard into the baked pie crust and bake at 375°F for an additional 12–15 minutes until edges are set.
  9. Cool completely on a wire rack for about two hours before serving.
