  • 3/4 cup light corn syrup
  • 3 large egg whites (room temperature)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Heat over medium-high without stirring until bubbling.
  2. Meanwhile, in a stand mixer or mixing bowl with a hand mixer, whip egg whites and cream of tartar until soft peaks form (about 3-4 minutes).
  3. Once the sugar mixture reaches 240°F, remove it from heat. Gradually pour it into the whipped egg whites on medium speed.
  4. Continue whipping on medium-high until thickened (7-8 minutes). Mix in vanilla extract.
  5. Allow the fluff to cool completely before storing in an airtight container at room temperature for up to two weeks.
