  • 45 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup canned pineapple juice
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon paprika

Instructions

  1. Rinse the chicken thighs and pat dry.
  2. In a mixing bowl or gallon-size Ziploc bag, combine all marinade ingredients except for the chicken; mix well.
  3. Set aside ½ cup of marinade for later use.
  4. Add chicken to remaining marinade; mix until coated. Cover and refrigerate for at least 4 hours or overnight.
  5. Preheat grill to medium-high heat (400°F) and oil grates.
  6. Grill chicken for about 10 minutes on each side until cooked through (internal temperature should reach 165°F).
  7. Grill pineapple rings alongside chicken until golden brown.
  8. Brush reserved marinade over cooked chicken before serving.
