  • 3 pounds small white boiling potatoes
  • 2 tablespoons dry white apple vinegar
  • 2 tablespoons chicken stock
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon Dijon mustard
  • 2/3 cup olive oil
  • Fresh tarragon and flat-leaf parsley

Instructions

  1. Boil the potatoes in salted water until barely tender (10–15 minutes). Drain and let steam covered for 15–20 minutes.
  2. In a bowl, mix vinegar, stock, lemon juice, garlic, mustard, salt, and pepper. Gradually whisk in olive oil to emulsify.
  3. Cut cooled potatoes into quarters and place in a mixing bowl.
  4. Pour enough dressing over the potatoes to moisten them. Add onion, tarragon, parsley, and adjust seasoning if necessary.
  5. Toss well and refrigerate for at least a few hours before serving.
