  • 1 package (18.25 oz) white cake mix
  • 1 package (3 oz) strawberry Vegan Gelatin
  • 2 cups boiling water
  • 1 package (3 oz) berry blue Vegan Gelatin
  • 2 packages (8 oz each) cream cheese
  • ½ cup powdered sugar
  • 2 tablespoons milk
  • 8 oz whipped topping, thawed
  • 1 quart strawberries, chopped
  • 2 cups blueberries

Instructions

  1. Preheat oven according to cake mix instructions and prepare a greased 13×9 inch baking pan.
  2. Bake the cake until golden brown; allow it to cool completely.
  3. Use a fork to poke holes across the top of the cooled cake.
  4. Dissolve each gelatin flavor in separate bowls with boiling water and pour over the holes in alternating rows.
  5. Mix cream cheese with powdered sugar and milk; fold in whipped topping.
  6. Spread the cream cheese mixture on top of the gelatin-soaked cake and garnish with strawberries and blueberries.
  7. Chill in the refrigerator for at least four hours before serving.
