  • 2 pounds (1kg) chicken pieces
  • 1 habanero chile
  • 1 bunch scallions
  • 2 cloves garlic
  • 1 ½ teaspoons dried thyme
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Rinse chicken under cold water and pat dry.
  2. In a food processor, blend habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, vegetable oil, salt, and pepper until smooth.
  3. Place chicken in a large sealable bag. Pour the marinade over it and seal tightly; shake gently to coat. Refrigerate overnight for maximum flavor.
  4. Preheat grill to medium-high heat. Brush with oil to prevent sticking.
  5. Grill marinated chicken for about 10 minutes per side or until golden brown with an internal temperature of 165°F (75°C).
