  • 1/4 cup table salt
  • 4 cups water
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeño (sliced and seeded)
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • Coarse ground black pepper

Instructions

  1. Brine the beef chops: Dissolve salt in water in a large container. Submerge the beef chops for at least 30 minutes (up to 2 hours).
  2. Prepare the glaze: Combine vinegar, peach jam, jalapeño, and red pepper flakes in a saucepan over low heat. Simmer until thickened; stir in butter.
