  • 23 tbsp key lime juice
  • 1 tsp key lime zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3–4 minutes).
  3. Add eggs one at a time, ensuring each is well mixed before adding the next.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Combine milk, key lime juice, zest, and vanilla in a measuring cup.
  6. Gradually add the dry ingredients to the butter mixture alternately with the milk mixture, starting and ending with dry ingredients. Mix just until combined.
  7. If desired, stir in a few drops of green food coloring for added visual appeal.
  8. Divide the batter evenly between the prepared pans. Bake in your preheated oven for about 28–32 minutes. To check if done, insert a toothpick into the center; it should come out clean. Allow cakes to cool in their pans for about 10 minutes before turning them out onto wire racks to cool completely.
  9. In a mixing bowl, beat together softened cream cheese and butter until smooth and fluffy. Gradually add powdered sugar while mixing well until fully incorporated. Then add key lime juice, zest, and salt; continue beating until fluffy and spreadable. Adjust consistency by adding more juice for tanginess or additional sugar if you prefer it thicker.
  10. Place one layer of cake on a serving plate. Spread an even layer of frosting on top before adding the second layer. Frost both the top and sides of the cake generously.
