  • 1 1/4 cups sweetened shredded coconut
  • 3 tablespoons coconut cream
  • 2 ounces cream cheese (softened)
  • 1 cup confectioners' sugar (sifted)
  • 1/2 cup shredded coconut
  • 1/2 cup unsalted butter (softened)
  • 3 cups confectioners' sugar (divided)
  • 2 tablespoons lime zest
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup coconut flakes (toasted)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy. Mix in egg yolks and vanilla.
  4. Combine wet ingredients: coconut milk and coconut cream.
  5. Gradually add dry ingredients to wet mixture, folding in shredded coconut.
  6. Beat egg whites until stiff peaks form; gently fold into batter.
  7. Fill cupcake liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean. Cool completely on wire racks.
