  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 cup cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienned
  • 1 avocado, sliced
  • 2 green onions, chopped

Instructions

  1. In a medium bowl, whisk together soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, rice vinegar, and optional red pepper flakes until well combined.
  2. Place flank steak in a resealable bag or shallow dish and pour marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
  3. Rinse uncooked rice under cold water until the water runs clear. Cook according to package instructions.
  4. Heat a grill pan or cast-iron skillet over medium-high heat. Remove steak from marinade and cook for 4-5 minutes per side for medium-rare doneness.
  5. Let the steak rest for 5-10 minutes before slicing against the grain.
  6. Assemble bowls starting with cooked rice, then add sliced steak, kimchi, cucumber, carrots, avocado, and green onions.
