  • 2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter
  • 1 ⅓ cups granulated sugar
  • 4 (8-ounce) packages cream cheese
  • 4 large eggs
  • ¼ cup lemon juice
  • 1 cup sour cream
  • 1 cup lemon curd
  • Heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (160°C). Mix together graham cracker crumbs, melted butter, sugar, and salt in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time, followed by lemon zest, juice, vanilla extract, sour cream, and flour until smooth.
  3. Pour the filling over the cooled crust and bake for about 1 hour until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour.
  4. Refrigerate overnight or for at least six hours. Before serving, top with whipped cream mixed with powdered sugar and vanilla extract followed by lemon curd.
