  • 1 tablespoon sugar
  • 1 tablespoon lemon zest

  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • Fresh thyme for topping

Instructions

  1. In a medium bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add yeast mixture and olive oil; stir until a dough forms.
  3. Knead dough on a floured surface for about 8-10 minutes until smooth.
  4. Place in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours or until doubled in size.
  5. Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  6. Prepare the cheese topping by mixing ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  7. Roll out the risen dough into a thin circle on a floured surface.
  8. Transfer to parchment paper; spread cheese mixture over the dough and sprinkle with fresh thyme.
  9. Bake for 10-12 minutes until crust is golden and cheese is bubbling.
  10. Drizzle with olive oil and honey before slicing.
