This dish features tender cauliflower, crispy turkey bacon, and creamy cheddar cheese, all tossed in a zesty dressing made from sour cream and mayonnaise.   • 1 large head cauliflower
  • 8 slices turkey bacon (cooked and crumbled)
  • 1 cup cubed cheddar cheese
  • 1/4 cup chopped chives or scallions
  • ⅓ cup sour cream
  • ¼ cup mayonnaise
  • 1 teaspoon white distilled vinegar
  • Salt and pepper to taste

Instructions

  1. Chop cauliflower into bite-sized pieces and place in a large microwave-safe bowl with 2 tablespoons of water. Cover with plastic wrap.
  2. Microwave on high for 4 minutes; let it sit for 2 minutes before removing the wrap and draining any excess water.
  3. Allow cooked cauliflower to cool for about 20 minutes.
  4. In a small mixing bowl, whisk together sour cream, mayonnaise, vinegar, salt, and pepper until smooth.
  5. In the cooled cauliflower bowl, add the dressing along with turkey bacon, cheddar cheese, and chives. Stir until fully combined.
  6. Refrigerate for at least 2 hours before serving to enhance flavors.
