  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour (for topping)
  • ¾ teaspoon ground cinnamon (for topping)
  • ¼ teaspoon salt (for topping)
  • 2 tablespoons unsalted butter (melted, for topping)
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt (for bread)
  • ½ cup canola or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the topping by mixing chopped pecans or walnuts, brown sugar, all-purpose flour, ground cinnamon, salt, and melted butter in a bowl until crumbly.
  3. In a large bowl, whisk together 1-¾ cups of all-purpose flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In another bowl, beat the eggs with granulated sugar until well combined. Then mix in canola oil, pumpkin puree, milk, and maple extract until smooth.
  5. Gradually fold the wet ingredients into the dry mixture until just combined.
  6. Pour the batter into a greased loaf pan and sprinkle the topping evenly over the batter.
  7. Bake for about 50 minutes or until a toothpick comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a cooling rack.
