  • 4 whole fish fillets (snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the fish fillets dry; season with salt, pepper, and dried oregano on both sides.
  4. In a skillet over medium heat, sauté sliced onions in olive oil until translucent (about 5 mins). Add bell pepper and zucchini; cook until tender. Stir in minced garlic for an additional minute.
  5. Spread sautéed vegetables in the prepared baking dish; place seasoned fish fillets on top.
  6. Scatter cherry tomatoes, parsley, dill, and drizzle with lemon juice and zest over the fish.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for another 5-10 minutes until fish flakes easily with a fork.
  8. Let cool slightly before serving warm with extra herbs and lemon wedges.
