  • 12 ounces dry pasta (farfalle recommended)
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • 4 ounces crumbled feta cheese
  • Half medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • Pinch of crushed red pepper flakes
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. 1. Cook the pasta in salted water until al dente. Drain and rinse under cold water.
  2. 2. While cooling, prepare the vegetables: dice cucumbers, halve tomatoes, and slice onions.
  3. 3. Whisk together olive oil, vinegar, lemon juice, garlic, oregano, honey, black pepper, salt, and red pepper flakes for the vinaigrette.
  4. 4. Combine cooled pasta with vegetables in a large bowl and pour over the vinaigrette; toss to coat.
